Skillet Barbecue Chicken & Rice
1 lb boneless, skinless chicken
1 breasts cut into strips
2 tablespoon oil
1 1/2 cup barbecue sauce
1 cup water
1 can (11oz) whole kernel corn,
1 drained
1 small green pepper, chopped
2 cup minute original rice,
1 uncooked

Brown chicken in hot oil in a large skillet on medium-high heat. Stir in barbecue sauce, water, corn and pepper; bring to a boil. Reduce heat; cover and simmer 5 minutes. Stir in rice; cover. Remove from heat. Let stand 5 minutes.

Yield: 4 servings
