Meatloaf
1/4 cup dry breadcrumbs (60 mL)
1/4 cup milk (60 mL)
1 x medium onion, finely diced
5 cloves garlic, smashed
1 x egg
3 teaspoons fennel seed, toasted (15 mL)
1 tbsp kosher salt (15 mL)
1 tsp black pepper (5 mL)
3/4 cup flat leaf parsley, chopped (175 mL)
1 cup MP Sauce, recipe follows (250 mL)
3/4 lb. ground beef (375 g)
3/4 lb. ground veal (375 g)
3/4 lb. ground pork (375 g)
Millionaire’s Relish, recipe follows

Preheat the oven to 325 degrees F (160 degrees C). Combine the breadcrumbs and the milk in a large bowl. Set aside.

Combine the onion, garlic, egg, fennel, salt, pepper, parsley, and 1/2 cup (75 mL) of the MP Sauce. Add the breadcrumb mixture and mix well. Gently mix in the ground meats.

Pack this mixture into the loaf pan. Pour the remaining 1/2 cup (75 mL) of MP Sauce over top. Place on a baking sheet and bake for about 1 hour and 10 minutes, until an instant-read thermometer reaches 160 degrees F (80 degrees C).

Let rest at least 15 minutes before slicing. Serve hot, accompanied by Millionaire's Relish.
