Marinated Thai Thighs With Fries
1/2 cup bottled peanut sate sauce (125 mL)
1/4 cup honey (60 mL)
3 tbsp bottled lime juice (45 mL)
2 tbsp soy sauce (sodium reduced is best) (30 mL)
1 tbsp prepared ginger (15 mL)
1/2 tsp paprika (2 mL)
2 x oranges, cut
2 x apples, cut
French vanilla yogurt
Cooking spray
450 g McCain 5 minute fries (16 oz)
Seasoning salt

Combine peanut sate sauce, honey, lime juice, soy sauce, prepared ginger and paprika into the bottom of a flat casserole dish. Stir well. Coat chicken pieces and let stand in fridge. Serve fruit and yogurt.

Preheat oven to broil. Place the chicken on a broiler pan, sprayed with cooking spray. Broil for approx 7 minutes on each side, but check regularly. Chicken should no longer be pink and the juices should run clear.

Spray a cookie sheet with cooking spray. Place fries on top and sprinkle with a little seasoning salt if you like and let stand. When chicken is cooked, remove from oven.

Place foil over pan to keep warm. Reset oven to 425 F (220 C). Pop fries into the oven. Bake 5 minutes on one side; flip; then bake 5 minutes on the other side.
