6 eggs; beaten 1 tablespoon soy sauce 1 cup bean sprouts 1/8 teaspoon pepper, white 1 tablespoon oil, vegetable 1 teaspoon salt 2 scallions; thinly sliced 1 oil, vegetable; for frying 1 medium onions; minced 1/2 lb shrimp; finely diced Sauce: 2 tablespoon soy sauce 1 tablespoon sherry, dry 1 tablespoon cornstarch 1 tablespoon cornstarch |
Rinse bean sprouts in cold water. Heat oil in pan and add scallions, onion & sprouts. Stir fry 1". Add cornstarch, soy sauce, shrimp, salt & pepper. Mix well. Remove to dish & allow to cool. |
