Stir-Fried Chicken With Chinese Cabbage |
1 1/3 pounds boneless skinless chicken breasts (abt 4) -- cut into 1" pieces 1 tablespoon soy sauce -- plus 4 teaspoons soy sauce 3 tablespoons dry sherry 1/4 teaspoon cayenne 2 tablespoons cooking oil 1 onion -- chopped 2 garlic cloves -- minced 1 teaspoon ground coriander 1 tablespoon wine vinegar 1/2 head Chinese cabbage - (abt 1 lb) -- sliced 3/4 cup drained sliced water chestnuts -- (from 8-oz can) 2 teaspoons tomato paste 1/4 teaspoon dried red pepper flakes 3 tablespoons water 3 tablespoons chopped cilantro or scallion tops 1/8 teaspoon salt |
In a medium bowl, combine the chicken with the 1 tablespoon soy sauce, 1 tablespoon of the sherry, and the cayenne. Let marinate for 10 minutes. |
