Szechwan Chicken And Pasta |
| 1 pound boneless skinless chicken breast halves 2 cups fresh pea pods (snow peas) (or one 6-oz pkg frozen pea pods, thawed) 1/4 cup soy sauce 2 tablespoons rice vinegar or white wine vinegar 1 teaspoon chili oil 1/4 teaspoon crushed red pepper - (to 1/2 tspn) 5 ounces dried Chinese egg noodles (or 8 oz fresh Chinese egg noodles) 1 tablespoon cooking oil 2 garlic cloves -- minced 1 large red or green sweet pepper -- cut thin strips 1/4 cup slices green onions 1/4 cup coarsely-chopped peanuts |

Rinse chicken and pat dry. Cut into 3/4-inch pieces. Coarsely chop the pea pods. In a small bowl stir together the soy sauce, vinegar, chili oil, and crushed red pepper. Set aside. |
