Indonesian Style Chicken Soup |
1 whole chicken 5 stalks green onions -- finely sliced 2 tablespoons sweet soy sauce 1 teaspoon vinegar Vegetable oil -- as needed 1/4 pound flour 5/8 cup water 1/2 pound beansprouts 1/3 pound crisp-fried potato chips 1/4 pound cellophane noodles -- soaked briefly in hot water until softened, and drained 5 hard-boiled eggs -- quartered 2 tablespoons fried shallots 3 stalks flat-leaved parsley -- finely sliced Spice Paste: 1 1/2 inches fresh ginger 10 small garlic cloves 1 teaspoon freshly-ground white pepper Salt -- to taste |
Put the chicken in a large pot cover with water and using medium-high heat, bring the it to a boil until tender. Set aside 8 1/2 cups of the chicken broth. |
