Crockpot Caldillo (Green Chili Stew) |
2 pound pork or beef 2 tablespoons oil 3 potatoes 1/2 cup onion 1 garlic cloves -- crushed 2 teaspoons salt 1 ounce green chilies -- diced |
Cube meat, sprinkle with salt and fry until brown in oil. Transfer browned meat to the crockpot.Dice potatoes and add to browned meat; slice onions and add, then garlic, salt, chilies and enough water to cover. Cook on LOW for 4 to 5 hours. Continue to add water if necessary. It will have a soupy consistency. |
