Bean Dip |
2 cups hot water 3 cups beer 1 pound pinto beans -- soaked overnight 1 tablespoon freshly-ground black pepper 1 tablespoon garlic powder 1 tablespoon cumin 1 tablespoon seasoning salt 1 1 1/4 ounces taco seasoning mix 1/2 cup chopped onions 2 hot peppers - (to 3) -- chopped 2 teaspoons lemon juice 1 pound Cheddar cheese -- shredded |
Place water and beer in slow cooker. Stir in beans, black pepper, garlic powder, cumin and seasoning salt. Cook on HIGH 5 to 7 hours or until beans are soft enough to mash. Mash bean mixture; add taco seasoning, onions, hot peppers, lemon juice and cheddar sheese. Stir until all ingredients are well blended. Chill before serving. |
