Crockpot Vichyssoise |
5 medium potatoes -- sliced 4 leeks, white and light green -- sliced 1 large onion -- chopped 2 cups chicken stock 2 cups milk 1 cup heavy cream 1 1/2 teaspoons salt Chopped chives -- fresh or frozen |
Combine all ingredients except milk, cream and chives in crock. Cook on HIGH for 3 hours. Puree mixture in blender or food mill and return to cooker. Add milk and cream, stir well. Heat to boiling for about 1 hour on HIGH. Chill and serve with chives. |
