Fish Stew A La Carolyne |
3 large red snapper or flounder - (abt 1 1/2 lbs) -- cut into 2" pieces 2 tablespoons olive oil or melted butter 1 clove garlic clove -- minced 1 large onion -- sliced 1 green pepper -- seeded, and cut into 1" pieces 1 zucchini squash - (to 2) -- unpeeled, sliced 1 can whole tomatoes - (15 oz) 1/2 teaspoon leaf basil 1/2 teaspoon leaf oregano 1 teaspoon salt 1/8 teaspoon freshly-ground black pepper 1/4 cup dry white wine === OPTIONAL === 1/2 cup fresh mushrooms - (to 3/4 cup) may be included |
Combine all ingredients in crockpot. Stir gently, but thoroughly. Cover and cook on HIGH setting for 4 to 6 hours. |
