Popover Muffins |
2 cups all-purpose flour 1/3 cup sugar 1 tablespoon baking powder 1/2 teaspoon salt 4 eggs 1/2 cup milk 1/4 cup butter-flavored shortening -- melted |
Grease twelve 2 1/2-inch muffin cups; set aside. In a large mixing bowl stir together the flour. sugar, baking powder, and salt. Make a well in the center. In a medium mixing bowl combine eggs, milk, and melted shortening; add all at once to flour mixture. Stir with a fork till the dry ingredients are just moistened. Fill prepared muffin cups almost full. Bake in a 400° oven about 15 minutes or till muffins are golden. Remove from pan. Serve warm. Makes 12 muffins. |
