Pumpkin Oatmeal Muffins
1 1/2 cups all-purpose flour
1/2 cup quick or old-fashioned oats
1/2 cup chopped walnuts
2 teaspoons baking powder
2 teaspoons pumpkin pie spice
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup libby's® solid pack pumpkin
2 eggs
1/2 cup honey
1/3 cup apple juice
1/4 cup vegetable oil
2 tablespoons quick or old-fashioned oats

COMBINE flour, 1/2-cup oats, walnuts, baking powder, pumpkin pie spice, baking soda and salt in large bowl.

COMBINE pumpkin, eggs, honey, apple juice and vegetable oil in medium bowl. Add to flour mixture; stir just until blended. Spoon into 1 2 greased or paper-lined muffin cups.

Sprinkle with 2 tablespoons oats. BAKE in preheated 375°F oven for 23 to 27 minutes or until wooden pick inserted in center comes out clean. Remove muffins to wire rack; cool slightly. Serve warm.
Makes 1 dozen.
