Pineapple Citrus Muffins
1/3 cup honey
1/4 cup butter or margarine -- softened
1 egg
8 ounces crushed pineapple
1 teaspoon grated orange peel
1 cup flour
1 cup whole wheat flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup chopped dates
1/2 cup chopped walnuts -- optional

Preheat oven to 375°F. In large mixer bowl, beat together honey and butter 1 minutes.

Beat in egg, then undrained crushed pineapple and orange peel. In medium bowl, mix remaining ingredients; stir into pineapple mix until just blended. Spoon batter into 12 greased muffin cups.

Bake in preheated oven 25 minutes or until wooden pick inserted in center comes out clean. Cool slightly in pan before turning out onto wire rack. Serve warm.
