Pineapple Muffins |
8 ounces crushed pineapple 1/2 cup all purpose flour 1/3 cup firmly packed brown sugar 1/4 teaspoon cinnamon 1/4 cup butter or margarine -- plus 2 tablespoons butter or margarine -- melted & divided 2 cups all purpose flour 1/2 cup sugar 1 tablespoon baking powder 1/2 teaspoon salt 1 egg -- beaten 3/4 cup milk |
Drain pineapple, reserving 1/4 cup juice. Set aside. Combine 1/2 cup flour, brown sugar, cinnamon, and 2 tablespoons butter; stir well. Set aside. Combine 2 cup flour, sugar, baking powder, and salt in a large bowl; make a well in center of mix. Combine egg, milk and remaining 1/4 cup butter, and reserved 1/4 cup pineapple juice; add to dry mix, stirring just until moistened. Spoon into greased and floured muffin pans, filling half full. Spoon pineapple over batter, and sprinkle with cinnamon mixture. Bake at 375°F for 30 minutes. Remove from pans immediately. |
