Apple-Raisin Muffins |
2 1/2 cups all-purpose flour 3/4 cup granulated sugar 1 tablespoon baking powder 3/4 cup heavy cream 1/4 cup fresh lemon juice 1/2 cup vegetable oil 2 eggs -- slightly beaten 1 cup shredded granny smith apple 1/2 cup small golden raisins |
Preheat oven to 350°. Grease and flour 24 muffin cups. Sift flour, sugar and baking powder into mixing bowl. Make a well in the center of the dry ingredients and add cream, lemon juice, vegetable oil and eggs. Mix until just loosely combined. Add shredded apple and golden raisins; stir to combine. Fill greased muffin tins three fourths full with batter. Bake 20 to 30 minutes, or until golden brown. Servings: Makes 24 |
