Cucumber & Tomato Salad |
1 Medium onion -- thinly sliced and the rings separated 2 cucumbers peeled and sliced 4 firm Roma Tomatoes (less juice that way) 1/2 Cup rice wine vinegar 1 Tsp salt 1/2 Tsp black pepper 1 Tsp oregano 1/2 Tsp garlic powder 1 Tsp parsley 1 Pinch basil. 1/2 Tsp sugar 1 Tbs parmesan (optional) |
Mix all ingredients except Parmesan. Chill in refrigerator at least two hours before serving. Sprinkle with Parmesan if desired before serving. |
