Pork Chops and Sweet Potatoes |
Salt and Pepper to taste 3/4 c All purposeflour 4 Loin or rib pork shops, cut 3/4 - 1" thick 2 tb Olive oil 4 Sweet potatoes, cooked, peeled and cut into pieces Sauce: 2 tb Margarine or butter 1/2 c Current jelly 1/2 c Orange juice 1 tb Lemon juice (fresh) Rind of 1 limon, grated 1 ts Dry mustard 1 ts Paprika 1/2 ts Ground ginger |
In a shallow pan, combine salt, pepperand flour. Dredge chops in flour mixture, then brown in hot oil in frying pan. In saucepan, combine all sauce ingredients, mixing well; simmer for 3minutes. |
