Grilled Chicken Caesar
For the Chicken

5 oz chicken breast
2 x medium portabello mushrooms
10 x sweet grape tomatoes
4 tbsp croutons
2 tbsp bacon bits
2 tbsp parmesan cheese
2 x lemon wedges
3 cups chopped romaine lettuce

For the Dressing

3 tbsp olive oil
1 tbsp lemon juice
2 x garlic cloves roasted and chopped

Grill or barbecue chicken breast - 5 minutes per side. Set aside to cool. Gently wash portabello mushrooms and cut into bite size pieces.

Thoroughly wash grape tomatoes. Roast garlic cloves in hot oven - 350° for 10 minutes and allow to cool. Once cooled, chop into small pieces. Saute mushrooms for approximately 2 minutes. Add tomatoes and saute for one more minute.

Whisk all dressing ingredients together until smooth texture is achieved. In medium size mixing bowl place romaine lettuce and add dressing, croutons and bacon bits. Mix thoroughly. Place in serving bowls or plates.

Top with sliced chicken breast, sauteed mushrooms, tomatoes and lemon wedges. Finish with freshly grated Parmesan cheese.
