Baked curried rice |
1 medium-size onion, chopped (1/2 cup) 1/4 cup seedless raisins 1/4 teaspoon curry powder 2 tablespoons butter or margarine 1 can (14 ounces) chicken broth 1/4 cup water 1/2 teaspoon salt Dash of pepper 1 cup uncooked regular rice |
Saute onion with raisins and curry powder in butter or margarine until onion is soft in a medium-size frying pan. Stir in chicken broth, water, salt and pepper; heat to boiling; pour over rice in a 4-cup baking dish; cover. Bake in moderate oven (350°F) 45 minutes, or until rice is tender and liquid is absorbed; fluff with a fork. |
