Cranberry Salsa
12 oz whole cranberries
30 ml juice of lime
30 ml juice of orange
2 tbsp honey
2 oz green onion, finely chopped
2 tsp jalapeno pepper, seeded, minced
2 tbsp parsley leaves
1 tbsp cilantro leaves
1/2 tsp cracked black peppercorns
15 ml dark rum or tequila

Process all the ingredients in a food processor until mixed to a chunky consistency. This salsa should not be too fine.
