1 Gallon Diced Tomatoes drained 6 Bell Peppers -- Diced 2 Jalapenos -- Diced 2 Serrano Peppers -- Diced 6 Anaheim Chili Peppers -- Diced 3 Medium Onions -- Diced 1 Tablespoon Garlic -- Chopped 1 Cup Cilantro -- Chopped 2 Tablespoons Salt 1 Teaspoon Black Pepper 1 1/2 Cups Red Wine Vinegar |
Add all ingredient into a large sauce pot. If it is too thick, add a little bit of the juice drained from the tomatoes. Heat on med- low heat till bubbly. Seal into quart leaving 1 inch headspace. Process at 11 pounds of pressure for 30 minutes. |
