Onion Frittata
8 x large onions
4 tbsp lard or butter (60 grams)
1 slices large slice raw ham
6 x fresh eggs
2 tbsp olive oil (30 milliliters)
2 x ripe tomatoes
1 tbsp grated Parmesan cheese
3 x basil leaves

Preparation time is 20 minutes. Place the lard (or butter) in a large frying pan and melt. Slice the onions finely and the raw ham. Place in the pan and simmer to soften.

Break the eggs into a bowl and beat roughly with a fork, season with salt and pepper to taste and add the grated cheese. Peel the tomatoes and fry them gently in olive oil for ten minutes.

When the onions are soft and turning brown mix the tomatoes into the eggs and pour the eggs onto the onions. After a few minutes turn the omelette with the help of a large plate then cook on the other side.

Can be served either hot or cold.
