Cranberry Slaw |
6 cups thinly-shredded white cabbage (may use pre-shredded coleslaw) 2/3 cup dried cranberries 1/4 cup toasted slivered almonds 1/2 cup soy mayonnaise 1 tablespoon fresh lemon juice 2 tablespoons minced fresh parsley |
Combine all the ingredients in a serving bowl and mix until well combined. Serve at once or cover and refrigerate until needed. |
