Greek Stewed Potatoes, Green Beans, And Zucchini |
2 tablespoons extra-virgin olive oil 1 large onion -- chopped 2 large potatoes -- peeled, and cut into 3/4" chunks 2 medium zucchinis -- sliced lengthwise, then into 1/2"-thick chunks 1 bag frozen green beans - (16 oz) -- thawed 1 can diced tomatoes - (28 oz) -- with liquid 1/2 teaspoon dried oregano 1/2 cup chopped fresh parsley (or a combination of parsley and chopped fresh dill) Salt -- to taste Freshly-ground black pepper -- to taste 8 ounces feta cheese -- preferably organic |
