Red Lentil Dal |
1 1/2 cups raw red lentils 1 tablespoon light olive oil 1 medium onion -- minced 2 garlic cloves -- minced 1 small hot green chilies - (to 2) -- to taste, minced 1 teaspoon freshly-grated ginger 1 teaspoon ground cumin 1 teaspoon turmeric 1 pinch nutmeg Salt -- to taste |
Rinse the lentils and combine them with 4 1/2 cups water in a large, heavy saucepan. Bring to a boil, cover, and simmer until the lentils are quite mushy, about 40 minutes. |
